Wedding cakes have changed since we started out 30 years ago when if you were asked for a sponge cake it was very unusual. Now we have all flavours of cake, vanilla, lemon, chocolate, red velvet, carrot, biscoff. Icing was royal icing or sugarpaste and now we have, sugarpaste, buttercream,ganache, frosting etc.
